Hot for Food Recipe – Tilapia
2 4 oz tilapia filet or any white fish works great for this dish
1 1/4 teaspoons salt, divided
3/4 teaspoon pepper, divided
1/2 tomato, sliced
1/4 cup capers, drained
2 tablespoons minced garlic, divided
A few pinches of cayenne pepper, depending on how hot you like it
2 tablespoons freshly squeezed lemon juice
1 tablespoon chopped rosemary leaves
3 tablespoons olive oil, divided
Preheat your oven to 400 degrees.
Rip off a large sheet of parchment paper to form a sack for the fish. Place a piece of parchment in a shallow dish then in the center of the paper place both fish filets. Season the fish with salt and pepper then start to layer. Add the sliced tomatoes. Then the garlic, capers, cayenne pepper, lemon juice, rosemary and drizzle the olive oil right on top. Fold over the top of the parchment then roll the sides in to form a sealed pouch. Arrange the pouches on a baking sheet and roast in hot oven for 12 to 14 minutes until nice and flakey. You might want to check around 10 minutes because the fish might cook faster depending on its thickness.
